Executive Chef Stephen Burke and Head Chef Daniel Hawkins have produced a sophisticated offering of Latin American fare. They use fresh ingredients in clever ways to keep their diners coming back for more. Six Degrees architectural firm has created a local treasure in a previously questionable area of St Kilda. The dining room is a warm, industrial space with a central bar; dried produce hangs artfully from the ceiling.
The well-constructed menu allows you to build a shared meal from a range of dishes, including street food, tacos and salads. Chorizo con carne is a winning snack. A crisp tortilla is accompanied by a rich and warming slow-cooked chorizo as well as black beans with sweet and smoky paprika and a slight kick of chilli. Soft shell crab tacos are a perfect balance of texture and flavour. The lightly battered crabmeat is still juicy, while spiced tomatillo salsa is fresh enough to cut through the fattiness of the fried crab.
