Light, and with a variety of textures, white asparagus with Jersey milk ricotta, almonds and nasturtium is a towering masterpiece of fresh ingredients and a mouth-watering choice to start your lunch. Roasted Hawkesbury chicken, with radicchio, golden sultanas, hazelnut and eggplant, shows off a perfectly cooked chicken breast with sweet, smoky and savoury accompaniments – it’s a well-thought-out and well-executed dish.
