The contemporary menu starts with unique variations on a classic dumpling. The prawn and scallop siu mai has a thin casing and abundant flavour. From the ‘colds’ section, the salmon yu sheng delivers julienne vegetables mixed with the raw fish and ginger–soy–sesame oil. Poached bang bang chicken comes with clear jade rice noodles and a creamy sesame dressing with fresh Asian herbs. The sizzling typhoon shelter prawns arrive in the wok so you can hear the sauce and juices pop and splutter. If you fancy trying your hand at cooking, the wagyu steak is served on a ‘fo zek’ hot coal set on fire, ready for you to cook to your preference.
PSST! If you want to leave the hard part up to them, the ‘Emperor’s Feast’ is a fabulous choice for $50 per person.
