Part of Guy Grossi’s restaurant empire, Merchant is dedicated to the delivery of traditional Italian food and hospitality. Daniel Airo-Farulla has been Head Chef at the restaurant since 2010. Located in the forecourt of the InterContinental Melbourne The Rialto, Merchant is a vibrant venue with a central open kitchen. It’s the place to dine with friends and family in a relaxed and inviting environment.
The extensive menu offers a fine selection of Italian pasta, polenta and risotto options to choose from, and there’s an enticing presentation of cakes for dessert. Papardele col cinghiale comprises silky pasta tossed with a hearty wild boar ragu. Mushrooms in the sauce are infused with wonderful flavour. Risotto zucca is a rich and creamy pumpkin and gorgonzola risotto that is perfect for a cool day. The al dente rice still has some firmness, just as it should.
