Situated slightly off the beaten track in Albert Park, the restaurant offers a great environment for breakfast (on the weekend), lunch and dinner. John’s wife, Dominique Bolger, runs the front of house, creating a warm and welcoming ambience in this elegant, yet relaxed dining room.
Start with a selection from the ‘tastes’ menu, such as classic pork and veal terrine, a meaty treat with pistachios adding wonderful colour and texture; or seared-to-perfection hiramasa kingfish – often referred to as the emperor of the ocean – contrasted with the richness of seasonal mushroom and ricotta rotolo. Barramundi, cooked just right and highlighted by a tangy, citrus-based glaze, melts in the mouth. With its earthy flavour, a side dish of roasted beetroot and fetta salad serves to further highlight the barramundi.
