Co-owners Nathan Kam and Zenta Staley established Hickson’s Food and Wine with the goal of creating an approachable waterside bar where locally available, seasonal food is matched to wine. Chef William Westman delivers on this brief, bringing innovation and creativity to the menu. This small, friendly bar affords water views over Walsh Bay to all diners, whether seated at the window-side tables, on the banquettes or on stools at the bar.
The menu offers dishes designed to be shared. A generous serving of smooth, creamy chicken pâté is matched with tart, house-made pickled cucumbers and a seemingly bottomless basket of toasted Iggy’s bread. Little mounds of creole tuna spiked with chilli and lime and placed on betel leaves for wrapping and popping into the mouth make a lovely palate-cleansing choice. From the larger dishes, try the rich pork belly with tamarind sauce, crunchy pickled daikon, cucumber and fresh salad greens.
