Executive Chef George Calombaris and chefs Travis McAuley and Arron Lynch offer an appetising array of traditional Greek dishes with a fresh, modern twist. The best of locally sourced produce is used to create the simple, wholesome dishes, each of which displays unique and complex flavours. Mirrored walls, exposed light globes and an impressive rattan ceiling feature give Hellenic Republic Kew a slick, contemporary feel. However, there’s also an old-world touch: staff members serve drinks from backgammon board trays.
The dishes feature top produce, perfect seasoning, memorable flavours and eye-catching presentation. For starters, try the corn in its husk dressed with a meaty, rich pastourma butter. Cut into four, the corn is perfect for sharing and is served with the blackened husk attached – it looks very striking. Slow cooked until the meat falls apart at the touch of a fork, lamb shoulder is tender and juicy throughout. It is accompanied by a visually appealing and delicious serving of wood-roasted red cabbage.
