The delightful trio of a pickled quail egg, incredibly thin grissini wrapped with seemingly dissolving lardo, and sublime kingfish with wasabi sets the tone perfectly. The divine texture of a beautifully caramelised swede with pine-nut emulsion and chicken jus is umami heaven, while the memorable well-seasoned spaghetti, with more-ish chicken liver, onion and rosemary, is a standout. It looks deceptively simple, but the red pepper and hauntingly smoked paprika risotto delivers beyond all expectations. Similarly, the half-roasted pigeon, red onion and confit garlic is cooked flawlessly.
