Twicecooked crispy pork belly has a perfectly crunchy skin and a delicate stuffing of spinach, apple and pistachio. The pork belly is served with a flavoursome red cabbage coleslaw and a poached half pear in a Madeira reduction. For an even meatier option, try the aged Black Angus beef mignon. Wrapped in crispy bacon, the well-cooked steak is served atop a potato and zucchini rösti, and accompanied by roasted Dutch carrots, beetroot and baby corn.
