Owner/chef Ganesh Gupta has been operating this Rose Bay favourite for over two years. Dal Bukhara is named after a creamy black bean soup that is famous in Punjabi establishments. This is a pleasant Indian restaurant that caters to local regulars. Pictures of Indian culture, Indian music, coloured pillows for comfort, tablecloths and attractive table settings give Dal Bukhara a sense of occasion.
Chef Gupta uses familiar spices and some you may not know, but they are all used in a balanced fashion. You will find that they are noticeably vibrant and carry a rich perfume, making them wonderful additions to any of the generous dishes on offer. The prawn biryani packs a nice chilli burn with plump prawns tossed through rice that has been tinged with turmeric. It is served with cucumber and yoghurt raita to offset the heat. The breads and accompaniments, such as the rotis, naans, parathas and pappadams, are a nice addition to the curries.
