Spanner crab matches white, softly flaked crabmeat with smoky prawns in a marriage made in heaven; jelly cubes of XO sauce add a hit of spice. Meat lovers will salivate at the Western Plains pork, which is cooked three ways. The rich flavour of the pork is well balanced with earthy mustard and leeks.
