British-born Tom Hope has been Head Chef and manager at The Carlisle Wine Bar since February 2016. He leans on his European training to serve up locally sourced produce that is, in the restaurant’s own words, ‘weird and wonderful’. The interior of this neighbourhood favourite is warm and welcoming. Young European waiters deliver small plates, carefully selected wine and inventive cocktails to candlelit tables, while a rock and roll soundtrack plays in the background.
The menu is truly a global journey, with enough variety to keep even a diverse table of diners happy. Crab and herb slider is a tasty combination of crabmeat, coriander and green chilli served on a soft brioche bun. It has distinct Thai flavours and a very spicy kick thanks to the chilli. Charred lamb is enhanced by crushed peas, mint, garlic, almond and buttermilk. The simple pea puree is surprisingly delicious, but the dish would have been improved if the meat had been cooked for a little longer.
