After shutting its doors for nine months for renovations, Captain Baxter has reopened with a new look and feel.
Still boasting the most sensational views of Port Philip Bay, the inside is modern, breezy and airy, with gorgeous natural light seeping through each window. There’s an uber-cool outdoor balcony overlooking the water, a retractable roof and a giant bar for pre- and post-dinner cocktails.
The menu is largely seafood focused with Asian influences and dishes perfect for sharing. Start with a plate of raw tuna, finely sliced and attractively presented on the plate, topped with a smoked ponzu and wasabi. Delicate pieces of raw cobia have a subtle pop from green native lime and a white dashi. From the charcoal grill, a 300g O’Connor grass-fed rump is cooked to perfection with green peppercorns and onions. A steamed John Dory arrives on the bone, with garlic shoots and fermented black beans, and teams nicely with a side of Chinese broccoli, cashew and black garlic.
