Owner Jesse Gerner established Bomba back in 2013, with the focus firmly on cruisy tapas-style dining. His travels through Europe inspired the dishes presented at this Spanish-style bodega by co-owner/Head Chef Andrew Fisk.
Take a seat up at the long wooden bar and watch as meat is sliced and tapas are plated. This is the perfect place to graze and watch the world go by.
Choose a selection of tapas or a larger paella to share. From the smaller nibbles, start with the crispy whitebait served with a herbed aioli. Motaditos, small bread rolls, are on offer with fantastic flavour combinations, such as burrata and Pedro Ximenez reduction or bone marrow and wagyu cecina. The chargrilled quail is an elegant dish, the gamey meat smartly paired with a sweet quince and pomegranate dip. From the larger raciones, the Pedro Ximenez-braised pork jowl is a delight; a smooth pureed cauliflower balances the sweetness of the braise.
