Applying his unique spin on classic Malaysian flavours, Soo Lam Tan shares his interpretation of hawker-style cooking from the streets of Penang and Kuala Lumpur. Chef Tan’s dishes artfully enhance local ingredients using Malaysian spices. Blue Chillies is a cosy venue suitable for an intimate first date or a small group looking to share dishes. The tasty range of street-food dishes has been drawing crowds to Fitzroy since 1999. Generous slices of fresh squid are marinated in ground ginger, fish sauce and turmeric, and then snap fried. Showcasing subtle flavours and quality ingredients, the squid is served with sweet chilli sauce for added heat. Curries are the stars of the show here, and curry lamb is one of the best. Slowcooked shredded meat is presented in a beautiful burnt orange Malaysian sauce that is bursting with the flavours of fenugreek, cumin and garlic.
