With impressive backgrounds working in some of the best restaurants abroad and in Sydney, chefs Tomi Bjorck and Samuel Cole have now joined forces and opened BLANCA. Both chefs’ travels and diversity come together in a unique way, creating a menu combining Mediterranean and Japanese flavours and techniques. BLANCA is located at the Hall Street apartment complex surrounded by an array of restaurants and shops. The setting and style of the restaurant is modern with stylish interior design and fittings, offering a relaxed and casual atmosphere.
The extensive menu is designed with sharing in mind. The warm, buttery manchego brioche sandwich with thinly sliced jamón serrano, truffled cabbage and manchego cheese is absolutely delightful. For mains, the perfectly cooked aged Black Angus beef steak with XO grilled greens, XO mayo sauce and pepper–miso butter is an outstanding flavour and aroma combination. The wine and cocktail menu offers some great choices.
