Here at this joint venture between the Gambaro family and Treasury Brisbane, French-trained Head Chef Thomas Boisselier has produced a decadent menu to suit the venue.
Walk past the glass fridge of dry-aged beef and the display of knives owned by the regulars, and into the opulent leather and grey dining room overlooking the Brisbane River. Black Hide by Gambaro at Treasury Brisbane is a carnivore’s delight, with marble-topped tables and smart, quick service. There is a comprehensive wine list, with many by the glass.
Start with beluga caviar with crème fraîche, chives and toast, or freshly shucked oysters, or perhaps try the lightly floured and fried calamari, served on a flavoursome ratatouille with fried capers. For mains, while there are other tempting options, the stars are the steaks – all from Stanbroke. With a melt-in-the-mouth pink centre, the angus eye fillet is nicely crusted, and served with a light and airy bearnaise sauce and salty wagyu-fat roasted potatoes. A side of bone marrow, lightly fried with shallots, lardons and mushrooms in a rich jus, adds extra umami and richness.
