The name has changed from Bistro Moncur Mosman to Bistro Mosman, but Jon Trouillet still leads the team in the kitchen. He trained with the best chefs in France, and his menu remains very French, with his passion for fresh produce evident in all his dishes.
Located in the popular The Buena in the centre of Mosman, this smart-casual bistro is popular for business lunches and is very much frequented for dinner by the locals. Large windows and high ceilings give the dining space an airy feel.
The extensive menu offers many of the popular French classics including Chef Trouillet’s signature dish ‘Le soufflé aux oignons caramélisés’ and snails cooked with parsley and garlic butter. With his pan-roasted Cone Bay barramundi, he shows off his broader cooking skills. The skin is deliciously crisp, while the the fish is moist, translucent and perfectly cooked. Cowra lamb cutlets are accompanied by a ratatouille with an amazing array of flavours, giving the lamb a strong stage on which to shine.
