The closure of Guillaume Paddington in late 2016 allowed acclaimed Executive Chef Guillaume Brahimi to solely focus his energies on wowing diners at his stylish trio of bistros in Sydney, Melbourne and Perth.
While finding the restaurant the first time can prove slightly tricky, you will be rewarded once you leave the hustle and bustle of George Street behind, as no expense has been spared with this luxuriant fit-out.
At Bistro Guillaume you’ll find generous and flavoursome dishes that play out like classic hits for this style of fare. Starting off on the right note, textbook twice-baked soufflé, seductively airy and light, is counterpointed by a restrained note of Roquefort. The textural and well-dressed side salad has just the right amount of acidity and zest to cut across the richness of the more-ish soufflé. A hearty portion of Barossa Valley chicken is served with the chef’s signature Paris mash and garnished with a rustic sauce chasseur.
