Successful restaurateur Bill Granger kicked off his foray into the bills empire at this very site 25 years ago. His style has always been synonymous with clean flavours, utilising the freshest ingredients – and still holds true to this day.
This Darlinghurst dining stalwart is a beautiful, sun-drenched, period corner building, with white walls, polished timber floors, and a colossal communal table as the centrepiece of the main dining room.
Perhaps start with semolina-crusted calamari, rugged and textural in both appearance and mouthfeel. The accompanying salad of finely shaved fennel and baby spinach, with the pop of juicy pomegranate seeds and zingy grapefruit, provides a refreshing counterpoint to the deep-fried calamari and creamy yuzu mayonnaise. Prawn and chilli linguine with garlic and rocket ticks all the boxes: the pasta is al dente; the prawns are beautifully cooked, still juicy and glistening; the aromas and flavours of garlic and chilli are heady: and it all comes together courtesy of a wonderful tomato-based sauce with great depth of flavour.
