Fritto di calamari comprises a lofty peak of crispy baby squid with surprise shots of sweet capsicum. It is teamed with a caper-sharp aioli that is fragrant with basil. Luscious al dente linguine rests in a punchy bisque that is rich in prawns, scallops, squid and cherry tomatoes. The mouth-watering dish is crowned by a juicy Balmain bug half served in the shell.
