After a decade in New York, Alan Wise – who has worked in some of the world’s finest restaurants – has returned to Brisbane and opened Beaux Rumble in the new Ada Lane food precinct.
The decor is inspired by New York’s Grand Central Station, with vaulted ceilings, marble pillars and parquetry floors. Behind the huge marble kitchen bench are the wood fired grills and oven. The style is sophisticated casual, inspired by the diversity of the Big Apple’s dining scene, and service is quick, attentive and knowledgeable.
The largely seafood and vegetarian menu is based on wood, smoke and fire, resulting in some unusual flavour profiles and quirky dishes. Start with a wood-fire bialy – a bagel stuffed with aged Comté cheese and caramelised onions. For mains there are wood-fire WA sardines with chimichurri and smoked chilli and a whole roasted Victorian rainbow trout. The ironbark roasted leek with truffled almond cream has become a signature dish: soft and earthy with an intense leek flavour complemented by a subtle creamy almond dressing – a must-try dish!
