Neil Perry, one of Australia’s most well-known chefs, has proven his hand at many cuisines over the years, yet Bar Patrón is perhaps his first serious effort with Mexican cuisine. Chef Pamela Valdes, who hails from Xalapa in Mexico, delivers the famous flavours and dishes of her homeland.
In partnership with prestige tequila maker Patrón, the Rockpool team have secured a stunning site, right in the very heart of Circular Quay – yet, there is no doubt that the food and drinks on offer are distinctly Mexican.
Starters such as salsa, guacamole and corn chips provide some familiarity for diners; more adventurous dishes worth exploring include chilaquiles and pozole rojo – a complex pork soup made with a whole pig’s head. There are, of course, tacos on the menu, but they are given the Neil Perry touch. Not to be missed is the enmoladas con carnitas: pulled pork matched with mole, a traditional Mexican dish that is carefully prepared over several days with more than 25 spices, including cocoa, to produce a deep and rich flavour.
