Chef Hamish Ingham has worked in New York and also at the world-famous Chez Panisse in San Francisco, where the menu is driven by organic, seasonal, local produce. His newest venture, Banksii Vermouth Bar and Bistro (named after botanist Sir Joseph Banks), on the water’s edge at Barangaroo, has a spacious and airy atmosphere. The botanical theme is echoed in the menu design and the seats, tables, couches and cushions, which are all in the cool greys and greens of the Australian bush.
The menu features a European-inspired line-up incorporating many Australian bush flavours. Served on lightly charred Sonoma bread, the pairing of muntrie (native cranberry) jam with a silky smooth chicken pâté is superb. Other small dishes include crisp, lightly crumbed sardines, and grilled prawns with curry-leaf butter and pickled turmeric, which is an inspired combination.
