Aløft comes from the Old Norse word for ‘in the sky’, and is an apt description of this restaurant located on the top floor of Hobart’s Brooke Street Pier. It is the perfect stage for owner/chef Christian Ryan to show off the skills he learned from his time at Gordon Ramsay’s Savoy Grill, and he is assisted in the kitchen by talented chef Glenn Byrnes (ex-Vue de monde).
Aløft offers a first-class contemporary menu executed with refinement and a superb use of local produce. Sticky pork belly, zucchini kimchi + sesame is a beautifully presented dish with a well-thought-out medley of elements. The acidity of the kimchi cuts through the richness of the pork. Yellow fish curry, beetroot + fennel has a lovely combination of textures. The sweetness of the beetroot complements the delicate flavour of the curry.
