The menu is designed for sharing with individual snacks to start, so ask your waiter about serving sizes. Perhaps start with the Thai-inspired beef tartare with crunchy roasted rice, cucumber, mint and fish sauce. Pasta is typically understated, so the finesse of warm, sweet honey bug meat, baby peas and tarragon with malloreddus is breathtaking. Finish with the iconic macaroni, paired with crisp pig-head meat, zingy chilli and an egg yolk.
