Chef Daniel Corbett (ex-Queenies) has worked with some of the leading names in the industry, such as Gordon Ramsay, Peter Gilmore and Justin North. Now he leads the team at 12–Micron, delivering dishes that revolve around the bounty of Australia’s land and sea.

12–Micron’s menu pays homage to the produce of Australia. The blue swimmer crab, bisque, fennel and daikon is a great dish to start your meal. The crabmeat is simply poached in a bisque to heighten the flavour. The aniseed flavour of fennel and the freshness of daikon complete this tasty entree. For mains, the Maremma Open Fields duck leg, parfait, pumpkin pie and honey is a succulent dish, with sweet elements complementing the dark meat and crispy skin of the duck.
