Liquid + Larder’s James Bradey and Warren Burns have announced the details of their new Sydney CBD restaurant and bar, The Gidley
Located in the basement of 161 King Street, Sydney (on the corner of King and Elizabeth Streets), The Gidley – a classic steak house taking cues from the world’s great grill restaurants – will be opulent in style and service, but also laden with a decent dose of Aussie bravado.
Head Chef Pip Pratt (Bistecca) will oversee a menu that aspires to be a cut above the rest. Expect signature dishes such as standing prime rib roast; ‘brick’ chicken, a deboned bird cooked and served on a searing-hot iron plate; or simpler fare like American-style burgers made from chuck and brisket.
The wine program, under Alice Massaria, who built the award-winning Bistecca list, will be a concise edit of Australia and the world’s classic varieties and styles, including a reserve of quality back vintages, with a cocktail program focused on classic ‘straight and stiff’ drinks.
Expect rich timber and plush leather lounges, private dining rooms and an atmosphere that is old school but peppered with new world charm.
There will be plenty to discover when The Gidley opens its doors, all going to plan, mid- to late November 2019.
