The Wolf-Tasker family launches a Bake House for Daylesford

The Wolf-Tasker family has opened a Bake House at their new Dairy Flat Farm and Lodge in the hamlet of Musk, just seven kilometres from Daylesford, Victoria.

Dairy Flat Farm and Lodge is the latest project from the team behind Daylesford’s renowned Lake House, who have long been innovators in regional Australian hospitality and tourism and champions of sustainable, local produce for almost four decades.


Aside from Lodge guests, the new Bake House will also service guests dining and staying at Lake House and visitors to Wombat Hill House Café where members of the public will be able to purchase the daily bake fresh from the ovens each morning.


Alla Wolf-Tasker AM said: “It has long been a dream of mine to offer an even wider variety of good quality breads for our guests at Lake House, but our busy kitchens meant we were already operating at capacity.


“I am old enough to remember when all the old country bakeries were bought up and their beautiful wood-fired ovens destroyed, which was a terrible loss for our heritage and food culture. We are proud to be championing a new generation of small-scale baking operations for our community and visitors to our region.”


Michael James, formerly of Melbourne’s renowned Tivoli Road Bakery will lead all baking at Dairy Flat Farm and worked closely with Alla Wolf-Tasker AM to develop the concept for the Bake House where properly fermented slow-produced breads and better grain varieties will take centre stage.


Michael James added, “It is an incredible opportunity to help Alla and the team bring the Bake House to life here in this beautiful part of the world.


Good quality breads made from the best grain and milled flour is what we are all passionate about and I look forward to sharing our vision and delicious products with visitors to the region”.


All baking for the Lake House restaurant and the new Lodge at Dairy Flat Farm will now come from the Bake House and will include baguettes, sourdough and Viennese loaves, warm breakfast buns, croissants and jam and custard donuts. A selection of freshly baked goods will be available to purchase daily at Wombat Hill House Café located in Daylesford’s Botanic Gardens.


Michael James will also run regular sourdough baking classes on site at Dairy Flat Farm for Lodge guests and as an extension of the Lake House Cooking School program.
