The final hospitality partners unveiled for 80 Collins development

The last four partners have been announced to complete 80 Collins’ offering in Melbourne’s CBD.

QICGRE is excited to share the final four venues to join its carefully considered list of hospitality partners at 80 CollinsColours BowlsGLACÉHandpicked Wines and Maverick.


Maverick is the newest café offering from the team behind Richmond’s Mayday Coffee & Food and Albert Park's first edition of The Petty Officer. Located on the ground floor of 80 Collins and fronting onto Little Collins Street, Maverick will offer ethically sourced specialty coffee from local roastery Axil Coffee Roasters, alongside a contemporary menu emphasising fresh local produce and seasonal ingredients. Designed by Pitch Architecture & Developments, the café’s interior promises a warm, modern and playful experience.


Colours Bowls is a new iteration of chef Charlie Carrington’s casual eatery, Colours by Atlas. This new venture specialises in fast yet nourishing Mediterranean-inspired, plant-based cuisine. The menu, restaurant design and overall healthy attitude is derived from Charlie’s experience in visiting Tel Aviv, Israel. The team worked with Melbourne-based architect ARCD and Tel Aviv design team Craft and Bloom to create a concept for Colours Bowls based on the “White City” architecture of Tel Aviv.


GLACÉ at 80 Collins will be the flagship location for dessert maestro Christy Tania’s growing business empire. This preeminent address calls for significance, and GLACÉ at 80 Collins will deliver two levels of quality hand crafted artisanal desserts. Each level will have an immersive feel and modern, clean design with an open plan kitchen that beckons guests to watch their dessert creations come together.


The ground floor brings a ‘Salon-du-Thé’ style space with the feeling of a Parisian patisserie, offering artisanal cakes, ice cream, desserts, coffee and high tea. Above, the second floor’s dessert bar will take cues from Christy’s work at Michelin starred restaurants such as L’Espadon at Ritz Paris and Guy Savoy, with a focus on plated desserts, dessert cocktails and a dessert degustation.


Handpicked Wines at 80 Collins will be Handpicked’s only urban cellar door in Melbourne. The red five-star Halliday-rated winery has a proven reputation for producing award-winning wines from multiple regions and a desire to bring the world of wine under one label, crafting a global portfolio of wines with a supreme sense of place.


The urban cellar door and wine bar at 80 Collins will offer curated wine flights, regional cheeses, charcuterie, barrel tastings, expert-led wine workshops and blending classes. A wide selection of retail options will be offered, including the full range of Handpicked wines, cheese and charcuterie. In addition, a rotating selection of wines will be available on tap for customers to use with refillable wine bottles; a system introduced to minimise waste. An office or home delivery option for those located within 10km of the CBD promises a three-hour turnaround.
