Created by the Ramblin’ Rascal crew, Charlie Lehmann and Marty Bailey, this cocktail is an old fashioned style but with a little Aussie holiday twist, perfect for Christmas and New Year’s Eve!
Ramblin' Rascal’s True Blue Old Fashioned
50ml Martell Blue Swift
10ml spiced pineapple and vanilla syrup (see recipe)
Garnish: Skewer through maraschino cherry on pineapple wedge
Stir down ingredients and serve over a large rock in a double old fashioned glass. Garnish with maraschino cherry and pineapple skewer.
To make the syrup: 300g pineapple cut into pieces (skin on, zero wastage), 300g white sugar, 1 vanilla bean split down the middle and cut in half, 1 cinnamon quill. Macerate in sealed container at room temperature, shaking whenever you walk past it over 24 hours. Strain solids for a spiced pineapple and vanilla syrup.
