Nour’s Middle Eastern Mash-up

Travel through Nour’s series of chef collaborations

Ben Williamson, Executive Chef at Nour in Sydney’s Surry Hills, is teaming up with two of his chef mates from Melbourne for a series of Middle Eastern mash-up dinner events. Covering the Levantine melting pot, Mexico, and Europe’s coast of Spain and Italy, Ben will welcome Tom Sarafian, Head Chef of Bar Saracen, and Frank Camorra, Head Chef and co-owner of MoVida restaurants, to the Nour kitchen, each for one night only.

 

Ben will work with each chef to create an exciting menu that showcases the respective signature cuisines through a six-course shared banquet, with matched wines. The first dinner will kick off on Wednesday, 2 October with Tom’s ‘Once Upon a Toum in Mexico’ event. Then, on 27 November, Frank Camorra and Ben will be celebrating the connection between Spanish and Middle Eastern food with a Moorish dinner.

 

Tom Sarafian × Ben Williamson at Nour – Wednesday, 2 October

The first dinner, with Tom Sarafian from Bar Saracen and Ben Williamson, will be themed ‘Once Upon a Toum in Mexico’, an extension of an event Tom has been doing at Saracen that celebrates the Lebanese emigration to Mexico, the fusion of the two cuisines, especially in street food. Ben is most excited about how much fun the event is going to be: “Tom is cooking the best Lebanese mezze in Australia right now, his food is naturally super punchy yet accessible and therefore will be tremendously delicious”. The dinner will entail anecdotes and insights of the history of this unique fusion. For the food, Tom and Ben will be developing complementary dishes that will be shared.

Frank Camorra × Ben Williamson at Nour – Wednesday, 27 November

For Frank Camorra’s evening at Nour, Ben and Frank will explore and celebrate the connection between the food of Spain and the Middle East. Guests can expect an exciting blend of dishes from Ben and Frank, with Ben exploring the Middle Eastern perspective and Frank bringing his Spanish skills and knowledge. “The food at MoVida has stood the test of time and remains one of my favourite places to eat today.  Frank’s food is unfussy, thoughtful and most importantly, delicious,” says Ben.
