28/09/2021To celebrate, they aren’t jumping into just any ordinary fire, they are jumping into wood-fire with the one and only ester.
On the last Monday of every month, Mary's celebrates with their Jump in the Fire event – a party to reward their brothers and sisters of the hospitality industry who have slaved over the weekend, while opening the eyes and mouths of people from outside the industry. The series invites some of the world’s best chefs and sommeliers to put their own spin on what Mary’s is all about. Since its creation last July, the Newtown residency has seen the likes of Duncan Welgemoed (Africola, Adelaide), Shannon Martinez (Smith + Daughters, Melbourne), Monty Koludrovic (Icebergs Dining Room and Bar) and Giovanni Paradiso (10 William St, Fratelli Paradiso, Paradiso Wine Imports) taking over Mary’s for a special one-off evening.
ester Founder and Head Chef, Mat Lindsay, along with Sommelier Nick Stewart, will be bringing a taste of what they are best known for – electric dishes, adventurous pairings and imaginative twists on the classics. Expect falafel and lamb vibes, paired with bespoke and native wines made exclusively for ester (i.e Basket Range Wine, Commune of Buttons, Manon Wine). If you prefer a beer with your burger, ester will be throwing in some Memento Mori and Wildflower beer made from their own wood-fired sourdough.
On the ester and Mary’s collaboration, Jump in the Fire creator Tai Tate states: “ester has long been one of our favourite places to eat and drink. Their wine list follows a similar ethos to ours, and their food has always been no compromise in terms of quality and flavour. The fact they cook with fire every day seemed very fitting also! As exciting as it is getting out-of-towners in for a takeover, getting the locals in is very important too. For a lot of people, ester might be a bit out of their reach, so it is nice to meet halfway, give the people a taste, and get the ester crew a little bit dirty in the process. For although they always deliver everything in a very welcoming, casual and warm fashion, I still consider it fine dining, in a very modern sense of the term. Mary's very foundation reeks of that same pedigree of service and food. The owners and a lot of the original staff have fine dining backgrounds, so I think there’s a lot of cut-from-the-same-cloth kind of vibe, which should make for a good mash up!”
ester’s Mat Lindsay says, “We have always loved how Mary’s does what it does and this collaboration gives us the chance to loosen the tie a little and get our hands dirty. This night will also give us the opportunity to test out a few things ahead of our planned kebab shop!”
The event is free and will be kicking off from 5pm till late.
