Frenchies will celebrate Truffle Month and their second anniversary with a truffle dinner event … or two!
For the truffle season, Frenchies Bistro & Brewery Executive Chef Thomas Cauquil has crafted a very special French degustation menu, using truffle in all dishes. “They’re all traditionally cooked. For instance, I store the truffles in the same box as the eggs, so they get infused with truffle”. Delicious! As Thomas always works with local producers, he sourced the black truffles in New South Wales. For this dinner, he’ll also be using premium French ingredients, such as foie gras. “The highlight will certainly be the yellowbelly flounder stuffed with truffle.”
Matching drinks: you choose!
Aiming for a very premium experience, Frenchies also offers matching wines or beers. Vincent, the master brewer, has chosen his best “Bières de Garde” to pair with the precious mushroom. That includes La Boussole, a Grand Cru beer that has been ageing in barrels for over 3 months. There are only 600 bottles available across Australia.
