It has taken nearly 5 years for Team Unico to consider expanding their core range of gin. Given the singular focus of Applewood – championing a more artistic and cultural view of spirits – whatever their next expression was to be, it had to speak volumes of uniquely Australian flavours, be crafted to sit in an entirely unique space within the broader spectrum of spirits, and be sublime in palate weight, shape and drive. Enter, Applewood Navy.
Drawing inspiration from Navy-Strength Gin’s ability to store exponentially more flavour than standard gin; Aussie beverage producers and agricultural entrepreneurs Brendan and Laura Carter (Applewood gin, Unico Zelo wines, and Økar Amaro) now launch Applewood Navy, the first addition to their core range in nearly 5 years.
Teasing out the starter botanicals of Applewood Australian Gin, Applewood Navy doubles the impact with the highest amount of juniper they have ever used, along with doubling the concentration of their star botanical – the ultra-rare desert lime.
Always championing a ‘place-first' mentality, the Navy Gin features rare yuzu grown in Victoria. With highly elevated citrus and pine top-notes, coupled with the highest ABV they’ve ever released – orris root is used as a unique fixative to weigh aromatics and flesh out the mid-palate – resulting in a Navy Strength Gin that speaks of a place and an intensity of flavour Applewood has not yet explored.

60ml Applewood Navy Gin
10ml Regal Rogue Daring Dry Vermouth
Stir ingredients in a cocktail glass until cold.
Double strain and serve in a chilled coupe.
Garnish with lemon peel. Enjoy!
Martini’s aren’t your thing? No worries! Applewood have tailored this gin to work well with a range of tonics, allowing you to ‘stretch out the accordion of flavour’. Please note: as this is an unchillfiltered product, it will go slightly pearlescent when diluted.
