The success of Justin Hemmes Merivale Group is built upon the understanding and introducing of exactly the right concept, in the right location, at the right time. Nothing is left to chance from the bespoke design, to the handpicked staff, ambience, music, and every minute detail that makes it work straight after the soft opening.
Bar Topa in Palings Lane, is the
brooding and bustling type of tapas and pintxos bar that Sydney has been
craving for. Sweeten the deal with the CV of Lauren Murdoch and Jordan Toft
looking after the blackboard menu, with $8 cocktails and Sangria on tap, and it
equals a great experience without emptying your pockets.
It was hard to choose the pick of the fresh cuttlefish, spicy Morcilla or more-ish chorizo (all priced at $9), from the blackboard menu featuring twenty options, with only the Pata Negra Jamón and Anchovies exceeding $10. Designed for a quick bite before a show, or just one stop along the way as you barhop through ivy or town, the first impression will surely win you over.
Like all Merivale venues, it is well staffed, and professional in all aspects of its service delivery, and it leaves one wondering why there is such a scarcity of similar venues to be found elsewhere in Sydney. Fortunately, Merivale never miss an opportunity to identify a gap in the market, and when they commit to a project they rarely get it wrong. Bar Topa is a welcome addition to a City that needs to find it’s after dark mojo again, and this is an excellent starting point!
